Pan-Seared and Crusted Cod

Ingredients
- 2 ea cod fillets
- 2 T Dijon mustard
- 2 T olive oil
- 1 ea lemon, zested and juice
- 3/4 C bread crumbs
- 1/4 C Parmigiano cheese
Instructions
- Whisk together the mustard, oil, lemon zest and juice. Mix together the bread crumbs and cheese, then season to taste.
- Coat both sides of each fillet with the wet mixture, followed by the dry mix.
- Pan fry the fish in butter.
- Plate and serve.
